Sourdoughs 

We bake four or five sourdoughs each weekend.  These three are our best sellers and are always available.

Hitchin SourdoughHitchin
Made with a blend of white, wholemeal and rye flour and our sourdough starter , this is a full-flavoured loaf.  Goes well with hard cheeses and makes excellent toast!  Our signature loaf and our best seller.

Pain de CampagneCampagne
A ‘nearly white’ sourdough boule, made with organic white flour and a small amount of wholemeal for extra flavour.  Your everyday bread.

Five Seed SourdoughFiveseed
A seriously hearty bread, this loaf is packed with a generous quantity of seeds.

Ingredients: Organic wheat flour, pumpkin seeds, sesame seeds, linseeds, sunflower seeds, poppy seeds rye flour, water, sea salt.
Allegen information: contains gluten, sesame

 

Focaccia 

We use Italian Type 00 flour, with a slow-fermented ‘biga’ (a very stiff pre-ferment of flour, water and a tiny amount of yeast) which creates a light and open texture. Instead of olive oil, we drizzle the focaccia before and after baking with Mrs Middleton’s cold-pressed rape seed oil which makes the bread soft inside and with a crispy crust.
